Proposal for Rice-Based and Koji-Grown Mycoprotein
AgroLudens develops and produces rice-based mycoprotein, an alternative protein derived from fungi like koji mold. Using solid-state fermentation, we patented a process in February 2024 to create high-protein, rice-based mycoprotein.
With a texture similar to ground meat, it’s ideal as a meat substitute in dishes like hamburgers. It’s also rich in umami components like glutamic acid.
At this exhibition, we aim to showcase its versatility and raise awareness through canned and retort-packaged foods featuring our innovative mycoprotein.
